Hello all!! Hope you’re all enjoying you Sunday and relaxing before yet another hectic week! Here is the long awaited accompaniment to the Savoury Vegetable Rice. Its very quick and easy to make and requires minimum effort! Try these for a work or school lunch box in a wrap or noodle salad.
6-8 Chicken Thighs,skin on(you can discard of the skin after) and cleaned with lemon juice and water, and drained.
2 Cloves of Garlic,crushed
1 Sachet of Miso Soup Paste- Miso is fermented salted soya bean paste, often used to make soups in Japanese Cuisine. It has a salty savoury flavour, and often has seaweed, tofu, and boniato flakes(A type of Tuna fish) in the soup.
Half a Teaspoon or to taste: Smoked Paprika,Black Pepper, Cinnamon, Coriander, Chilli(Optional).
Prepare the chicken, and set aside to drain. When it has drained enough, sprinkle the seasonings and open the sachet of miso soup paste. Add the crushed garlic and massage the meat, making sure to get the seasonings under the skin.
Preheat the oven to gas mark 200. Place the chicken in a baking dish, with a sprinkle of oil, and cook for around 25 minutes, or until the juices run clear from the chicken pieces. Serve hot or cold, with side dishes of choice.
