Mackeral With Orange And Hot Nut Sauce/Caballa Con Naranja Y Salsa De Nueces

Hi everyone! I can’t believe its August already! This year has gone too quickly! And now the rains have come.. Goodbye Summer! If you still have Summer where you are then this light and flavourful mackerel dish is for you. It can be served without the nut sauce if desired,but the combinations of the sweet orange,nuts and tomatoes merge together to create a pleasant flavour sensation! This dish is also quite nutritious, and contains healthy fats from the fish(experiment with Salmon,Herrings or Sardines) and contains good amounts of heart healthy minerals, Magnesium and Potassium, Vitamin D and B Vitamins.

INGREDIENTS

SERVES 4 PEOPLE

4 Mackerel fillets, or 2 Whole Mackerels,gutted and washed in lime juice and water.

Quarter of a Spanish Onion sliced

2 Cloves of Garlic crushed

1 Cup of Cherry/Grape Tomatoes

3 Sprigs of Fresh Thyme

Chilli powder to taste

Small handful of Fresh Flat Leaf Parsley chopped

Juice of 1 Orange

Light amount of Salt and Black Pepper

HOT NUT SAUCE:

1 Bag of Mixed Nuts,pan roasted until browned.

1 Bell Pepper deseeded and sliced.

Half a Spanish Onion sliced

Garlic Cloves,Basil and Parsley to taste

Nutmeg to taste

Juice of Half a Lime

Salt and Pepper to taste

METHOD

First,cut the whole mackerels into two, or buy them already filleted. Wash them in lemon juice and water. Pat dry with kitchen paper, and season with salt and pepper and a small amount of chilli powder if you desire.

Chop onion and parsley,crush garlic and squeeze orange. Wash tomatoes, set aside.

Fry those ingredients in a covered pan on medium heat, adding thyme, and minus the orange juice.

Lightly pan fry the fish fillets until crisp an golden. Set these aside too.

After around 15 check the onions tomato mixture, and add the fish and a little seasoning and the orange juice and leave to cook for another 5 minutes.

FOR THE NUT SAUCE:

In a dry pan,add the nuts over a high heat,gently shaking the pan to allow an even toasting. This may take 5 minutes.

Allow to cool a little then pound into a powder using a mortar and pestle, or as spice grinder.

Add bell pepper, onion and garlic to food processor and blend.

Add the nuts and lime juice and salt,along with the herbs. Blend again until smooth. Add a few drops of water to help if necessary.

Add to a pan and cook for around 7 minutes or until the flavours merge together and you can taste all the flavours together and no more raw onion and bell pepper.

Also look for oil on top of the mixture. This happens when the nuts have heated enough for the oils to seep out. Serve hot with the mackeral, vegetables and other side of choice. Disfrutalo!
