Dinie’s Corned Beef Hash/Hash de Carne De Vaca Por Dinie

Hey guys,fed up of turkey? Got fresh  parsnips and potatoes to get rid of? Well today’s recipe is tasty and quick and can be used with anything that you have by way of leftovers. I used corned beef for this,but you can make it vegan or vegetarian by using tofu or soya chunks,and perhaps vegan cheese! Experiment with the flavours to your taste.

INGREDIENTS

SERVES 4

A tin of Corned Beef,cubed.  

AROMATICS:

1 Onion,chopped,

1 Spring Onion,chopped

2 Cloves of Garlic 

Handful of Parsley, chopped

Thumb sized piece of Ginger peeled and chopped.

SPICE MIX(To taste,at least a teaspoon of each):

4-5 Medium Potatoes,diced

2 Parsnips, diced

1 Large Carrot,diced

* Try to make all vegetables the same size for quick and easy cooking.

Method

Put the chopped vegetables in a pot,with water to cover them and a pinch of salt. Boil for at least 15 minutes, or until tender,yet firm.

Fry the aromatics in a pan on medium heat.

When the onions have softened(10 minutes), add the spices and boiled vegetables,and fry for 3 minutes.

Then add the cubed corned beef:

Add this to the pot,gently stirring it in. 

Heat through for 2-3 minutes to blend with the other food. Serve with condiments of choice, and side dishes or eat alone. Disfrutalo!!
