Spicy Black Eyed Peas With Mushrooms And Pumpkin Greens/Guisantes De Ojos Negros Con Hongos Y Verduras De Calabaza

Here is another quick, tasty bean and pumpkin greens dish, this time with cloud mushrooms and in a rich tomato sauce. I served it as an alternative to meat sauce and pasta. If you wish, use different beans, and cheeses, or if vegan, use nutritional yeast powder/vegan cheese supplement.



250 grams of Black Eyed Peas, soaked overnight for 8 hours. Or use 1 can of black eyed peas.
1 Small Onion diced,
2 Cloves of Garlic crushed,
3-4 Cloud Mushrooms (These can be bought from a Chinese store. Presoak in hot water until softened.)
Half a Pack of Dried Pumpkin Greens (Ugu in an African store), or fresh greens/spinach.
1 Tin Of Tomatoes
Salt to taste.



1 Bay Leaf, 1 & 1/2 Teaspoons of Pimento Seeds,Dried Thyme,Cumin,Annatto Powder, and 1 Small Piece of Moruga Scorpion Chilli-This is an extremely hot chilli, from Trinidad, with an aroma and taste similar to dark chocolate,with warm nutmeg notes. Use milder chilli, if you’re not brave enough! Hahahahaha!!
Oil to sauté


Firstly,rinse the peas,and put them to cook in the pressure cooker with water cover covering over them by 2 inches. Leave on a high heat to pressurize for 20 minutes. Then turn down the heat for around 10 minutes or less.

Grind spices.

Then in a pot, boil the dried mushrooms and pumpkin greens, for 10 minutes, until they plump up. Drain and rinse free from grit. Chop onion and garlic:


Then chop the mushrooms:

Then chop the pumpkin greens,after moving the stalks:

In a pan fry the onions and garlic, after around 5 minutes,add the mushrooms and greens,


then add the tomatoes and spices:


Leave to bubble gently until onions have softened and mushrooms have cooked for at least another 10 minutes. If the peas have cooked, quickly cool the pressure cooker(If using a manual one), by pouring cold water over the weight of the pot, until it stops hissing. Check the softness of the peas. You don’t want them too soft,but cooked and firm.

It would be advised to fry the onion at least, whilst the peas are cooking in the pressure cooker or earlier to save time.


The sauce and beans should be cooked for around 10 minutes,meanwhile boil some pasta. Check seasoning, and serve, if desired, with cheese,nutritional yeast, or vegan cheese. Disfrutalo!!

    2. I need someone around me, a personal secretary of sorts, to write down my thoughts as I have them while I’m in the midst of doing other things. An apprentice to finish my work after I get started so I can move on to other things. I have so many ideas, and so much going on I can’t keep up… or maybe I just need someone to organize my time so that it is better used… ever feel like that??

      My dog bit my right hand in February, which slowed me down quite a bit. He bit me while I was cleaning mud off his feet, (a reaction on his part, not an attack). I cleaned the wound thinking all was okay, but the next day my hand and arm showed signs of major infection. Blood poisoning. I ended up in hospital with medicine pumping in my arm for three days. I also had to have minor surgery to remove damaged tissue. I never lost mobility or anything like that, but found it difficult to work with my hand for any length of time that included typing and or designing on the computer. All this was result of the blood poisoning. My dog was due for a teeth cleansing, and the germs in his mouth were apparently lethal. It was amazing to me, as I’ve never been sick or in hospital, except childbirth. I learned that I could have died had I not gone in.

      I’ve spent a good part of my time improving my dress making skills. Trying to build a pattern that will fit me…. It’s been a slow process. I find it easier to fit things on other people than on myself.

      I also sing and I joined a band that performs once a week for a retirement home. I had started guitar lessons the week before my dog bit me. So I put the lessons on hold.

      On the 31st of October, I gave my dogs a bath. I have three of them. All terriers. The littlest one I rescued from the dog pound. He’s about a year old, full of energy and mischief. He drives the other two up the wall. Winston is 11, and Percy is 7. They are full of energy, but nothing compared to the little one, Henderson. I gave them all baths and as I was bathing a talking to Winston, I reminded him of how he’d bit me. I showed him the healed wound and said how lucky he was to be alive :). Then I told him if he bit me again, he’d get his next bath from the angels.

      A few minutes later, I left the house to go to my first guitar lesson with a new instructor. My first lesson since cancelling the lessons in February after the dog bite incident. A new instructor. Someone that was excited to teach me, and not charge me, because he simply wanted to pass on the knowledge.

      I came home from my lesson with renewed hope in the possibility of learning to accompany myself. I bent down to pet Winston, and the little one came and jumped up wanting some attention, and then Percy joined in and before I could get my hand out of the middle of what was becoming a brawl… dammit if that boneheaded Winston didn’t bite me again!

      Again not intending to hurt me, but defending his space.

      I cried.

      This time I cleaned my hand and my neighbor drove me to the emergency room. The doctors tended the wound, and my hand is almost back to normal.

      My dog is still alive…. I haven’t told too many people about the second bite, because for some reason, I feel embarrassed. And I don’t want anyone to tell me to get rid of my dog.

      My children cried at the thought of putting Winston down. My son is 28 and lives in San Francisco, my daughter is away at University, her first year. They were upset, and it would hard. Ugh.

    3. I get what you mean.. I currently have three recipes that I would like to upload, but spend the day dithering or doing something else.

      Wow!! Your dog bit you twice!!!?? Are you going to behavioural therapy?? I think your dog needs help.. Or to be given away or something.. I know you don’t want to hear that,but suppose he bites a child.. I don’t want to hear that you were ill or someone took you to court to sue you…. That’s not cool what Winston did.. I understand that he is family.. But dogs show bad behavior in that way indicate something wrong.. My new year is OK so far and will continue to be! I look forward to your posts!
