Lemon And Chilli Potato Salad-Ensalada De Patatas Con Limon Y Chile

Hello everyone!! Its been a while but I’m back! I have been so busy you wouldn’t believe…. But I have also had a kind of writers block…I just couldn’t think of recipes that I could add here.. This one is one of the recipes that I have recently made up, and is for all of you who love Potato Salad Minus the heavy mayonnaise, with lemon zest, garlic and chilli! Try to vary it to your palate, and add sweet/bell peppers or other vegetables..

Lemon and Chilli Potato Salad

Lemon and Chilli Potato Salad Close Up

5-7 Medium Sized Potatoes, cut, unpeeled and washed-Use Desiree, Baking Potatoes, or a whole bag of Baby New Potatoes.
4 Chopped Cloves Of Garlic
1 Lemon, with Grated Zest, and Juice, or to taste
2-3 Tablespoons of Truffle Oil
1 Teaspoon of Chopped Fresh Chilli/Powder/Flakes

Firstly, wash the potatoes in a colander, then cut the potatoes into one inch pieces. Preboil a kettle and put some water into a pot and a pinch of salt, add the potatoes and put to boil for 15 minutes or until tender. Meanwhile, chop the garlic and chilli, and grate the lemon peel. Check the potatoes, if cooked, drain and rinse in cold water. In a frying pan on a medium heat add the oil, garlic, chilli, and lemon peel, and leave to heat through until slightly golden, and then add the lemon juice and season with salt and black pepper. Pour the mixture over the potatoes and mix gently to avoid breaking the potatoes. Serve warm, with barbecued meat or vegetarian protein, or leave to chill for 3 hours.

  1. Believe it or not, I think of you more often than you would imagine, especially when I’m stuck between a rock and a hard place with the non-blogging. I say this because it’s happened to you before just as it’s happened to me. And to others, too!

And I’ll just bet you’ve also thought, “Hmm. I think I’d be okay giving it up.” But you know we’re not going to do that! It’s just the pea brain taunting us to SHOW UP ALREADY!!! As in, Do something!!! Anything!!! Just break out of the slump, and you’ll be okay.

By the way, I did read the recipe you sent after; but you know me. Certain ingredients I can’t (don’t) use. I have lots of food sensitivities, so I have to be careful. It is what it is, which is why I tell you that simple works best.

I’ve got you in my thoughts and prayers, kiddo! All in God’s good time.

    1. Thanks for your message of support Deli… I haven’t thought of giving up,but I felt a kind of despair at not being able to blog anything…. Topics to do with God or Food are so vast its unreal… There are so many ways to talk over,or cook over something. Talk again soon!

  2. Oh, my goodness! I’ve been thinking about you a lot today! So whaddaya know? Here I get your post. Joy in the afternoon!

Your photo is absolutely gorgeous. New hairdo?

I kind of thought you had writer’s block again. Me, too. Except for the church blog. That happens every week without fail. Too many depending on it. But I feel your “pain.” Teeheehee.

Glad you’re back with this scrumptious potato recipe ’cause it’s one I will most definitely try not just because it’s easy, but because we love potatoes. And, say? Do you have any potato salad recipes in your treasure trove?

Great “hearing” from you! And here’s to more shared inspiration, eh?

    1. Hi Deli!! I have had so much to deal with…But Im getting through it.. I have a mentor to try to help me with my blog…What use she serves I don’t know… I have had to amend my c.v so many times and she backtracks with she says… I am going toi get a job soon… I can feel it…But via my own efforts rather than with help…Except God of course.. I just couldnt figure out a new recipe…. I’ve got my groove back and I will be trying to do at least on new recipe a month..I dont have a big collection of potato salad recipes, but in the caribbean community, we use a lot of root vegetables.. Potatoes being one of them…Most of the potato recipes, and anything else, just come to me… Depends on what ingredients I have and whether I want to experiment with a spice or herb that I don’t use often.. Good to hear from you too!!
