This is a tasty way to make a friday night fish and chips dinner…With spices to revitalise this classic and traditional meal..
INGREDIENTS
1 Cup of Harina Pan(Pre-Cooked Cornmeal) Salt and Black Pepper to taste Sprinkling of Cracked Sechuan Peppercorns 1-2 Tablespoons of Chopped Coriander 1-2 Birdseye Chillis chopped finely 1 Teaspoon of Garlic and Turmeric Powder 1 Teaspoon of Baking Powder(The Gluten-Free type!) 6 Fillets of Snapper-Get the fishmonger to do this for you, if you cannot fillet them yourself, as I did.. Oil for fryingMETHOD
Clean and pat dry the fish fillets, and mix the dry ingredients together. Heat the cooking oil in a pan. Add enough water to mix the dry ingredients, making it into a thick batter, and dip the fish into this, being sure to coat the fish. Place the fish in the hot oil, in a pushing away motion, to avoid the oil from splashing you. Put two pieces of fish at a time, frying for around 5 minutes, turning throughout the time. Repeat as necessary. Serve with chips(fries) and salad.Enjoy!!
