Dinie’s Salmon Roll

This is a version of the classic salmon en croute..But my version of it..

 

INGREDIENTS

SERVES 6-8 PEOPLE

1kg of a Side Fillet of Salmon
1 Tub of Cream Cheese
Heaped Teaspoon each of: Wholegrain and English Mustard,Salt,Black Pepper,Rosemary.
2 Large Spring Onions, chopped, both green and white parts
3 Crushed Cloves of Garlic
2 Tablespoons of Red Wine Vinegar
1 Packet of Puff Pastry

METHOD

Scale the salmon if necessary, if possible get one which is skinless. Set aside, and mix the seasonings, spring onion, and garlic in a bowl, into the cream cheese. Roll out the pastrywider and longer than the size of the salmon fillet and place the salmon fillet in the middle of the pastry. Top with the cream cheese mixture, and lightly pinch the edges of pastry to cover the fillet and seal the end of the fillet. Bake in a preheated oven on 160 degrees 40-45 minutes or until a deep golden colour, during which time the fish should have been cooked and tender. Enjoy!!
