This is the most popular vegetable dish, and rather simple too..
INGREDIENTSServes 6-8 servings as a Main Course, or 8-10 as a Side Dish. 1 Large Cauliflower and Broccoli cut ino florets and washed
300 grams of Cheddar Cheese/Vegetarian Cheeses of choice
Soft Silken Tofu(1 Carton)
Grating of Nutmeg
3 Cloves of Garlic 2 Heaped Teaspoons of: Dried Parsley, Wholegrain and Hot Mustard.
Salt and Black Pepper(Be careful with the salt due to the cheese and high salt content!)
1 Carton of Single Cream/Alpro Soya Cream
2-3 Tablespoons Mashed Potato Flakes/Flour
20-30 grams of butter/Soya Oil
Put the vegetables into boiling salted water, and boil for 10-15 minutes or until tender. Blend upto half the tofu with a little water and add to a saucepan. Grate the cheese and peel garlic. Melt the butter/ add the soya oil. Add the garlic, parsley and nutmeg, and fry for a few minutes. Add seasonings, except the salt. Add these to tofu if using. Add the potato flakes and Soya cream/cream, plus a drop of water(Around 200 mls). Add cheese/vegetarian cheese and allow to melt for 5-10 minutes. During this time the sauce should have thickened to a desirable consistency. Drain the vegetables, and place in a deep dish, pouring over the cheese sauce. Bake on 170 degrees for 15-20 minutes.
