Ribs are normally boiled and then smothered in barbecue sauce..This is a twist on how ribs are normally cooked, and tasty too!!
Half a Rack Of Pork Ribs, divided into individual ribs
Half an Onion, sliced
4 Cloves Of Garlic Chopped
2 Teaspoons of:
Schezuan Peppercorns, ground
1 Teaspoons each of:
Lebanese 7 Spice
75 grams of Cowpeas, soaked overnight for 8 hours
2 Tablespoons of Powdered Coconut Milk, dissolved in 150 mls of hot water
Firstly, wash and drain the meat.Add the seasonings and along with the onions,seal the meat in a hot pot for at least 10-15 minutes.Add the cow peas, and about 500 mls of water. Leave to simmer for at least and hour and a half. After the beans and meat have become tender, add some coconut milk powder, dissolved in hot water. Leave to cook for 30 minutes more. Adjust the seasoning also. Serve with Oven Baked Herbed Chips, and a salad, or rice and coleslaw.
