This a take on the classic ‘Funghi’ pizza..
One 360-400 gram Block Of Cheddar Cheese-You may need less than this for the pizzas
2 Cups of Tomato Sauce(See Recipe)
Half a packet of Oyster Mushrooms, washed and sliced
Half A Packet of Shitake Mushrooms, soaked, rinsed and sliced
Half a packet of Enoki Mushroooms, washed and sliced
250 grams of Plain Flour
1 Sachet of Fast Acting Yeast
Pinch of Salt
Firstly make the dough. To do this combine the flour, salt, and yeast. Add some oil, and warm water and start to mix the dry ingredients into a dough. The dough shouldn’t be too wet and sticky-You should be able to make a soft, yet not dry dough. Knead the dough until it forms a soft and smooth dough. Reserve for a moment.
Chop the vegetable ingredients, and reserve. Grate the cheese. Break off some dough, the size of a golf ball, maybe a little bigger. Roll out the dough and with a ladle, pour and smooth the sauce over the dough. Scatter the mushrooms dough, then the grated cheese. Put in a preheated oven, on 180 degrees and cook for 15 minutes until golden. Repeat with the remaining dough and ingredients. This should make 4-6 pizzas Serve with salad and fries or coleslaw.
