Tomato Sauce

A simple tomato sauce for all meals…


2 Tins of Chopped Tomatoes
2 Teaspoons of Dried Rosemary/Sage/Basil/Oregano
Salt to taste
Black Pepper to taste
2 Cloves of Crushed Garlic
1 Onion chopped
Vegetable Oil


Chop and fry the onion, and after a couple of minutes add the rosemary and garlic, if using. Fry for a further 5 minutes and then add the chopped tomatoes.

Fry for 10 minutes, stirring, and making sure that the mixture doesn’t stick. This is done so that the tomatoes develop a sweet flavour, rather than a sharp acidic flavour. Add 500mls of water, and taste.

If the sauce is still acidic,add a teaspoon of sugar.
Cook for 10 minutes, leaving it to bubble. Allow it to reduce to a slightly thick sauce. Blend if desired. Serve over pasta, Vegetables or any other meal of choice.
